Why do we call our cookies, 'calming cookies'?
Well, we found the recipe in the writings of St. Hildegard of Bingen, a 12th century Benedictine nun and herbalist who gave them the name, 'nerve cookies', because of the calming properties of cinnamon, nutmeg and cloves which are essential ingredients in the recipe and considered superfoods in our day.
Hildegard writes, "Eat three to five cookies a day. They create a cheerful countenance, glad spirits and lighten a heavy heart." (Hildegard's Medicine, Folk Wisdom Series)
